Garum – a sauce made from the crushed innards of fatty fish fermented in the sun with salt and herbs. A staple of Roman cuisine, it added flavor and savory notes to high-end dishes as well as being used as a stand-alone condiment. Produced in various grades and consumed by all social classes, garum became such an essential part of Roman gastronomy that a huge network of trade routes evolved to distribute it to every part of the empire.
